For the Split Peas in Sauce
Split peas (1 cup)
Sweet peas (½ cup)

Fresh Parsley ( about ½ cup when cut with stem)

1 scotch bonnet pepper

1/2 tablespoon vegetable butter

For the White Rice
2 cups of long grain jasmine rice
Garlic (3, minced)
3 cups of water
Oil
Salt (as desired)
For the Vegetable Stew
2 chayotes
1 eggplant
1.5 cups of cut spring beans
½ cup cut carrots
½ cup cut celery
3 scallions (or 1 leek)
½ cup minced onions
½ cup minced yellow bell pepper
½ cup minced red bell pepper
3 cups minced cabbage
2-3 cups minced mushrooms (2 portobello, mixed shiitake, oyster, and crimini)
1 small tomato (½ cup if cut)
4 tablespoon of Haitian seasonings
1.5 tbsp of tomato paste
1 cup of frozen spinach (2 cups if fresh)
2 cups of fresh watercress

For the Haitian Seasoning
10 garlic
2 scallions
½ cup of fresh parsley with stem
Some thyme (about 5 branches)
¼ tbsp black pepper
